There are 14 various species of hardwood used when making these. The glue is ALWAYS food safe and these trays are rubbed down with mineral oil.

FOOD TRAY MAINTENANCE
ONCE TO TWICE A YEAR, YOU WILL NEED TO PUT MINERAL OIL OR BUTCHER BLOCK OIL ON TRAY.
THEY SHOULD BE CLEANED WITH A DAMP CLOTH AND NOT SUBMERGED UNDER WATER.
